From hot to cold
Explore small portions of vegetables, shrimp or thinly sliced meat for cooking, or chill a block to serve properly prepared fruit, cheese, sushi and other cold bites. Arrange several blocks for a shared spread.
Contact with the salt surface can add salt flavor. Moist foods and longer contact can pick up more salt, so taste before adding extra seasoning. Salt blocks do not make raw food safe or replace proper food handling and cooking.
Use & care
Use a fully dry block and let it come to room temperature before heating. Start low and increase heat gradually; never put a cold block straight onto high heat. Avoid sudden changes between hot and cold. Use heat-resistant gloves and a stable, heat-resistant support. The block can stay hot after cooking, so let it cool completely before cleaning or chilling. Use proper food-handling practices and check that meat and seafood reach safe internal temperatures.
For cold serving, chill a fully dry, room-temperature block in the refrigerator. Arrange properly prepared foods shortly before serving.
When fully cool, scrape away food and wipe with a damp sponge or soft brush, using as little water as possible. Do not soak, use soap or put in the dishwasher. Pat dry, let it air-dry fully and store in a dry place. Natural salt wears down with use and can change color or develop small surface fissures. Inspect before use and stop heating a block with deep cracks, loose pieces or unstable support.
